David's Steak Burgers

• Sweet Chili Sauce
• Steak (we use cube steak)
• Hamburger buns
• Butter
• Cheddar Cheese

Grill or fry steak for about 10 min on one side and flip over and continue for another 5 min or until cooked the way you like it. Take steak off the heat; let it rest while you prepare the buns. Take a large hamburger bun, butter the inside of both halves and bake, broil, or grill the bun until the butter is melted and bun is toasted on all sides. Remove bun, place steak onto bun. Spread about 1/4 tsp. of the sweet chilies (sp) sauce over steak, add cheddar cheese and put back into oven or on grill just long enough to melt the cheese. Pull from heat, add top bun. Garnish with lettuce, tomato, onion, or anything else that you'd like. Very yummy!!!

Pete’s Sweet Pork Butt

• Sweet Chili Sauce
• 1 large Pork Butt

Place butt in smoker. Take Sweet Chili sauce, a little honey and some of your favorite spices and mix together (salt, pepper, garlic) Pour mixture over top. (Amount all depends on size of butt) For a 10 lb. butt, smoke for 10 hours @ 225 degrees, It’s Awesome!

Shannon’s Baked Chicken Dish

• Jalapeno Relish (Sweet Chili Sauce would be good 2!)
• Chicken breast, de-boned or drumsticks (you could also use pork instead)

Preheat oven 350 degrees. Brush about 1/4 tsp of the yellow jalapeno sauce on both sides of chicken. Put into a oven-proof 9x9 inch pan (for four chicken breasts) that has been sprayed with non-stick cooking spray. Add chicken. Cover pan with aluminum foil or oven-proof lid.
Cook for fifteen minutes. Pull pan out of oven and flip chicken over, be sure to add another 1/4 tsp to each side of each piece of chicken before turning over. Always use clean utensils to add sauce. Never put a dirty utensil back into sauce jar. Then replace foil or lid bake for another 15 min. or until meat thermometer placed in the thickest part of meat reads 170 degrees or meat is no longer pink.
Pull from oven, add another 1/4 tsp. of sauce over each side of chicken. Let set for five minutes and enjoy! Also great if you let the meat chill in the refrigerator and then cut the meat into strips and serve over salad greens or pasta salad! Yummy!!!

Shannon’s Baked Salmon Dish 

Spread about 3 TBS of the jalapeno relish over a large fillet of salmon, on both sides. Then cover it with foil in a large baking dish and baked it, covered @ 350 for about 30 -45 min. Until done, and then let it rest for about 10 minutes & served it. AWESOME!!!

Heathers Tasty Tuna Steaks

Marinade
zest 1 lg orange
mince 1 garlic clove
2 tsp chopped rosemary
salt/pepper to taste
1/2 cup olive oil
1/4 cup Balsamic vinegar
4 lg Tuna steaks (marinade overnight)
-----------------------------------------------------------
wild rice
pine nuts
Sweet Chili Sauce

Grill Tuna.  On side, cooked wild rice with toasted pine nuts, layer peeled orange slices over rice and sprinkle in chopped green onions.

Drizzle 1 cup of Sweet Chili Sauce over Tuna.

Ron’s Tasty Tacos

• Ground beef 1 lb
• Jalapeno Relish ½ cup
• ½ an onion minced
• Chicken stock ½ cup White wine ½ cup (Any)

Zachary & Josiah's Grilled Babyback Ribs

• Rack of Ribs
• Either or both sauces
• Salt
• Pepper

Heat grill to 400 degrees.  Prepare the ribs by sprinkling the salt & pepper on both sides of rack, to taste, then using a pastry brush add sauce or relish. 
Place on prepared grill for 15 minutes on one side, turn & grill for 10-15 minutes, or until cooked the way you like them.

This is good on country style ribs too!!

Lareesa & Leila's Chip Dip

Mix 1/4 cup of jalapeno sauce into 1/2 cup of sour cream.  Mix until well blended!  Cover and let sit in refrigerator for an hour to let flavors blend.  Remove dip and serve with your favorite tortilla chips! Yummy!!!

• Jalapeno Relish
• Flour tortillas
• Cream Cheese
• Ham

T's corn on the cob dip sauce

T's corn on the cob dip sauce 1/4 cup Sweet Chili Sauce or (less or more to taste) 1/2 cube of butter 2 fresh garlic cloves minced pinch of suger pinch of salt Saute your garlic in butter. When done, add the Sweet Chili sauce, salt and suger. Bring to a sizzle. Roll corn on the cob in sauce! It is awesome. We also used the rest as a bread dip.
